Right next to Slussporten, Gästrummet is set to open in April. A new, dynamic concept where some of the food and drink world’s most interesting voices are invited to take over the space for a limited time and create their own experience. Ida Bauhn, winner of the 2025 Chef of the Year award, is the first to move in.

Gästrummet is a creative stage where restaurateurs, winemakers, bartenders, bakers and producers are given the opportunity to shape their own world within its walls. Here, tradition meets experimentation, and established styles meet new ideas. Every guest leaves their mark, and every visit becomes a unique story.

Four to six times a year, the doors open to a new participant. It might be a young talent on the verge of making a name for themselves, a well-known figure taking a new direction, or a producer keen to show what their ingredients can become in the right hands. Behind every guest lies a story of their background, motivations and ambitions – stories that become part of the experience in the Gästrummet.

First to move in is Ida Bauhn, winner of Chef of the Year 2025, who will be moving in on 13 April.

“I feel incredibly privileged to be the first to take up residence in the Gästrummet. It’s a special feeling to finally be able to invite people into my world – to be able to say ‘welcome to my home’. I’m bringing dishes from my winning menu in Chef of the Year, and it means a lot to be able to continue working with them. Competition dishes are created for a specific moment, but they’re always based on something you’re truly passionate about. That’s why there’s also a touch of sadness when the competition is over. To now be able to breathe new life into them again feels fantastic,” says Ida Bauhn

Ida Bauhn will be taking up residence at Gästrummet between 13 April and 2 May. During this period, a tasting menu featuring dishes from her winning entry in Chef of the Year 2025 will be served.

“Gästrummet is a dream we’ve long wanted to realise – a place in constant flux where we invite some of the most interesting voices in food and drink, from Sweden and abroad. Each guest gets to put their own stamp on things and create something unique. With Ida Bauhn as our first guest, Gästrummet gets off to a flying start and sets the tone for a series of unique gastronomic experiences to come,” says Maximilian Catenacci, Managing Partner.

Ida Bauhn is not only the winner of Chef of the Year; she has previously captained the Swedish national culinary team and represented Sweden internationally, including at the Culinary Olympics in Stuttgart in 2024.

During Ida Bauhn’s time at Gästrummet, Mellerud’s Mästarbrygd 2025 will also be served – a lager developed in collaboration between her and Spendrups’ master brewer Richard Bengtsson. The beer is brewed with a generous proportion of wheat malt for a light and approachable character, balanced with organic German and American hops that impart a fresh aroma and pronounced bitterness. A golden-yellow lager with a rounded body – created as an extension of Ida’s flavour profile.
